Brioche loaf

Ingredients

  • 100 g butter
  • 100 g milk
  • 500 g wheat flour
  • 50 g sugar
  • 5 g salt
  • 1 pkg dry yeast
  • 4 eggs
  • 1 extra egg for brushing/coating the loaf before baking

Instructions

  • bring cold ingredients to room temperature
  • my preferred way is to melt the butter on the stove on very low temperature and mix in milk, sugar, salt, and yeast to bind everything together
  • in a big bowl add the mixed ingredients plus eggs and flour
  • knead to a dough for ~ 10 minutes
  • cover the bowl and let rest in a warm place for ~ 40 minutes
  • make ~ 16 smaller balls and stack them into a baking form
  • coat the top with the extra egg
  • let rest again for ~ 15 minutes
  • let it bake in a pre-heated oven at 170 °C for ~ 40 minutes
  • optionally cover with aluminium foil to protect against overly dark browning
